s you can see, it’s still very much a work in progress, but, there can be little doubt that Andrew and Tracy Holmes’ new Kilcoole deli is going to be special.
And, if all those catering awards are anything to go by, feckin’ yummy.
Taking its name from the number on the door over in Bullford, Kilcoole, Kitchen Twenty Eight will be open from 9.30am to 3.30pm daily, Monday to Friday, and Saturdays 11am to 3.30pm, with breakfast consisting of pastries, sausage rolls and eggs done, we’re told, multiple ways. For lunch, it’s gourmet sandwiches, soup and healthy salads, including vegan options. The coffee will be locally roasted, whilst there will be treats on offer all day.
Luckily, as this groovy new Kilcoole takeaway deli gets ready for its February 10th opening, we managed to grab young Tracy Holmes to find out more about the Holmes’ latest big adventure…
Given that Ireland is now 94% coffee shops, what inspired this move? “We’ve always wanted to do a deli but it was never the right time,” says Tracy, “wedding catering took over! We moved our Andrew Holmes Catering production kitchen here from above The Beach House to Kilcoole last February, and immediately knew we could make it work from there. When we noticed that there are no food or coffee outlets in Bullford Business Campus, we realised Kitchen Twenty Eight would be a very welcome addition.”
With doors opening at 8am, that’s going to mean an early, early start in the Holmes household, no? “It will mean starting at 6.30am. We also have a young son now who is 18 months old, and he usually drags us up at 6am – so, it will actually be a fight to see who can leave for work first…”
Finally, given that Andrew Holmes Catering has won the main title at the Irish Wedding Awards in 2017, 2018 and 2019, Kitchen Twenty Eight should have its four Michelin stars by June, right…? “Haha! Well, here’s hoping!! In all seriousness, when we talked about what kind of food we wanted to offer, we really just said ‘simple food done really well’. We are excited about what we’re doing here, and part of that is doing things a little different with some of our menu offerings – something I think you have to do to keep ahead of the game in this industry.”
