Continuing our raiding of our archives – after a little virus fire wiped out much of 2014’s GG posts – here, from June 5th of that year is Gilles Gaillot, the charming, disarming Frenchman who first wooed local resident Emma Gray and then, thanks to his rather yummy wood-fired pizzas, the whole of Greystones.
You can catch Gilles and his distinctive silver bullet food truck down by the South Beach entrance, at the old Watson & Johnson car park, on many an evening, helping make Greystones that little bit more bohemian and bonhomie. And chubby.
Naturally, any right-thinking person is wary of the French, but Gilles seems to be one of the good guys. Partly because Emma Gray trusts him, but mostly because he comes bearing hot, delicious, tearable food.
You can find out more about Gaillot & Gray Wood Fire Pizza on their Facebook page here. Tell ’em the Guide sent you, and get no discount whatsoever. Well, he is French.
