t is, of course, a sandwich pretty much made in heaven, bringing together a much-loved chef with a much-heralded, do-good and feelgood café.

Yep, having Paul Quinn come out of retirement to drive the kitchen in the new Rise At The Abbey looks like a definite win-win.

Sitting pretty down at the newly-restored Abbey Grounds in Wicklow Town, this Rise will follow its Cove original in being all about yummy food and helping the charity work of its mothership, Tiglin.

Given that the Taste Of Wicklow festival is taking over the grounds for the weekend means that you’ll actually have to buy a ticket to that foodie love-in to check out the new Rise, but from Monday, July 13th, it will become business as usual, Quinn and co opening from 8am to 4pm seven days a week.

And, hey, it will also be free entry.

Young Paul has been busy making beautiful wooden kitchen utensils since hanging up his apron at The Three Qs, which may or may not have been part of a rehabilitation programme, we’re not sure. Either way, any 12 steps appear to be done agus dusted, as the mighty Quinn steps up to the oven once more. Something he’s actually been quietly doing alongside buddies Fiona and Anastasia in Tiglin’s Coolnagreina for the past four years.

“When The 3Qs ended, I actually thought my cooking days might be over,” Paul tells us, “and I began exploring new avenues, new ventures. Volunteering to help provide food for the Ukrainian people living in Coolnagreina got my creative juices flowing again though, and now the three of us making the move to Rise At The Abbey feels like a very natural next step…

“I’m really excited about bringing something new to Wicklow Town,” he finishes, “and all the profits will be going to people who need it the most.

“So, it’s soul food in every sense of the word…”
