Cluskey Rolls Out Some More Dough

The new Bread 41 building…

aving conquered Pearse Street, Stillorgan, Cabinteely and little ol’ Greystones, former Firehouse Bakery chief Eoin Cluskey is set to make some serious dough in Bray too.

Due to open within the next couple of weeks, his latest Bread 41 bakery will be sandwiched between the original Daata on Bray seafront, and its fancier extension alongside the Catalyst coffee shop.

Which means that this hipster bakery should fit right in on Duggan Drive.

It was during Cluskey’s travels abroad in his twenties that the qualified carpenter first realised he had a passion, and knack, for cooking, and so enrolled in the Ballymaloe Cookery School for 18 months back in 2010. Not too long after that, he helped establish Delgany’s award-winning Firehouse Bakery, three years of serving the best-looking and most refined Irish people on the planet inspiring him to team up with business partner Stephen McKenna to open the first Bread 41 on Pearse Street in the big city, back in September 2018.

Since then, success has followed success, to the point that the lad can now charge €150 for a 3-hour workshop letting people know what bread is. We sift you not.

Cluskey recently explained that 2% of the company’s turnover goes to child-centred initiatives, whilst 88% of the workforce at Bread 41 are female. Because there’s something just a little off about a fella handling your Tabatiére.
