And so it is that Ms Kose is currently mulling over her options for Yellov’s next big adventure, considering at least four options on the table as well as plotting a pop-up restaurants or town down on a friend’s Ashford mushroom farm, or anywhere else that proves a comfortable fit.
“I will be incredibly sad to leave The Boat Yard,” she tells us this afternoon, “and I definitely, definitely want to have a place somewhere in Greystones, if I can. For now though, I’m taking a break after two years of working non-stop.
“When I get back, it’s all about finding the right place, the right fit, and that can take time…”
